Sakanishiki, sake rice filled with the blessings of Yoshika Town

Sakanishiki” is an indispensable sake rice for sake brewing in Shimane Prefecture. This sake rice is a variety originally developed by Shimane Prefecture, and its name comes from Sako Shrine, which is said to be the “birthplace of sake. The Sakonishiki rice grown in Yoshika Town is nurtured in the rich natural environment of the headwaters of the Takatsu River, with its clear water and fertile soil.

The town of Yoshika has the headwaters of the Takatsu River, whose clear waters create an ideal environment for rice cultivation. Sakonishiki absorbs plenty of this water and grows into sake rice with an elegant sweetness and delicate aroma. Sake brewed from this rice is characterized by its full flavor and smooth texture, making it an excellent partner for Japanese cuisine.

Sakanishiki is also highly regarded in sake brewing because of its large grain size, large heart white, and ease of making koji (malted rice). Sakonishiki sake made by a local brewery will be a drink that captures the climate of Yoshika Town as it is.

Through Sakonishiki, nurtured by the nature of Kichika Town, we will bring the terroir of this land to the rest of Japan and the world.
